Publishing sections on one page and not another

I was hoping to have my main website with its menu bar and various sections. Under a section would be pictures, and if you clicked on a picture it would link you to a page where you can scroll through more pictures -- WITHOUT the header/sections visible.

It is clearer in this website: http://www.linascheynius.com/

So essentially have a menu on certain pages, and gone on others. Is this possible?

Maybe full screen mode fits your needs?
Look at this page made with Berta http://www.mississippi-kyoto.com/?section=works-2 there is more galleries and when you click on image - it opens in full screen - and you can navigate with buttons "< >".

Is there no way to do it the other way -- even with custom CSS?

No, CSS is for styling, in your example there is different technical solution.
Try to find another way to achieve the result. Switch between templates, play around with gallery settings, hope you will get to result that satisfies you.

If you change the template, doesn't it mess everything up and you have to re-do the whole site?

You can switch between templates safely without loosing any data. Templates is just for visual website layout.
